this is a meal i look forward to having again and again! im Italian and grew up on a high-carb diet. pasta was a staple in my household and back then, was considered a ‘healthy’ meal! while trying to sort out all of my health issues, i began eating quiona pasta and other gluten free options. i now look back and laugh.. none of those gluten free options were beneficial to my health! they were detrimental.
finding spaghetti squash and realizing how incredible the flavour and texture is, i am not tempted to go back to eating sugar/gluten/grain filled pasta options.
all you need:
– 1 spaghetti squash
-2 tablespoon coconut oil
-herbs to taste
-himalayan salt to taste
-organic tomato sauce (only spices and tomatoes.. no preservatives, sugar, etc)
-1 lb grass fed, grass finished beef
-2 tablespoon grass fed butter
set oven to bake at 320 degrees.
in a large baking pan, fill 1/2 way with water. place the horizontally cut halves of the spaghetti squash facing up. pour the coconut oil and any herbs onto the open halves. cover the baking pan with foil and place in the oven. allow this to cook for 30 mins or until squash is soft enough to scrap out easily.
in a sauce pan, cook the grass fed, grass finished beef until brown. poor tomato sauce over the beef and allow it to warm up. add any spices you like!
once the squash is all pulled off the edges of the skin, poor sauce on top and top with 2 tablespoon grass fed butter. take a photo of your amazing creation, mix and enjoy!
